TURKEY PARMIGIANA 
1 lb. turkey breast, cut into 1/2-inch slices
2 eggs, beaten
2/3 c. fine dry bread crumbs
4 tbsp. oil
Mozzarella cheese slices
1 (15 oz.) can tomato sauce
1/4 tsp. basil leaves
1/4 tsp. oregano leaves

Dip turkey slices in egg; coat with bread crumbs. Heat 2 tablespoons oil in skillet over medium-high heat. Add half of the turkey. Cook 3 minutes; turn. Top with Mozzarella. Cover and cook 2 minutes more.

Place turkey on platter; cover to keep warm. Repeat with remaining oil, turkey, and mozzarella. Combine remaining ingredients. Simmer 5 minutes. Serve over turkey.
