EGGPLANT CASSEROLE 
1 lb. hamburger
1 sm. onion
Salt and pepper to taste
2 lg. eggplants
1 c. uncooked rice
1/8 tsp. red pepper

Peel and cut up eggplant and onion. Cook in pot with 2 cups of water until it falls to pieces. Have rice cooked and ready. Brown hamburger while eggplant and onion is cooking. Drain hamburger and eggplant mixture to remove extra liquid. Combine all ingredients. Place in casserole dish. Bake for about 15 minutes at 350 degrees. Sprinkle bread crumbs on top before baking.
