SALMON LOAF 
1 (15 1/2 oz.) can salmon
1 1/2 c. bread crumbs
2 tsp. grated onion
Salt and pepper
3 tbsp. salmon liquid
1 egg
1/3 c. evaporated milk

Combine all ingredients. Pack in greased and floured 8 1/2 x 4 1/2 x 2 5/8 inch loaf pan. Bake at 350 degrees for 35 minutes. Serve with Butter Sauce.

BUTTER SAUCE:

3 tbsp. butter
Salt and pepper
2 egg yolks, beaten
3 tbsp. flour
1 1/2 c. milk
1 tsp. lemon juice

Melt butter in small saucepan, stir in flour, salt and pepper until smooth. Add milk, eggs and lemon juice.
