DANDELION SALAD | |
We always turned up our noses when Dad made this "Spring Tonic". He tried to convince us that the dandelion greens were full of wonderful nutrients. He was probably right, as usual. The fresh young leaves are really more tender and flavorful then endive. 6 c. loosely packed young dandelion greens (cut stems and youngest leaves into small pieces and wash) 1/8 lb. bacon, diced 3 onions, finely chopped1 tbsp. vinegar 1/2 tsp. salt 1 tbsp. sugar 1 tbsp. water 2 tsp. finely chopped fresh herbs Fry bacon and onions. Place in salad bowl together with dandelion leaves. Combine vinegar, salt, sugar, water and herbs to make a salad dressing. Pour over salad and toss just before serving. Garnish with sliced hard boiled eggs. P.S. The microwave oven is a quick and easy way to fry the bacon in these German recipes. |
