PARMESAN FILLETS 
1 1/2 lbs. fillets (orange roughy)
1/2 tsp. salt
Pepper to taste
3/4 c. sour cream
1/2 c. grated Parmesan cheese
1 tbsp. chives
Paprika
1/4 c. fine dry bread crumbs

Wash and pat fillets dry with paper towel. (NOTE: If fillets are allowed to soak in milk for 1 hour before starting, the fish have a milder taste.)

Arrange in greased baking pan. Sprinkle salt and pepper over fish. Mix sour cream with cheese, chives and crumbs. Spread over fish. Dust with paprika. Bake at 425 degrees for 12 minutes just until fish flakes. Makes 4 servings.
