SWEET POTATO PIE | |
3 c. sweet potatoes, baked 1 stick butter 2 c. sugar 3 medium eggs 1 can sweetened condensed milk 1 tsp. vanilla 1/2 tsp. cinnamon 1 bag coconut (frozen) 1 dash of salt 3 (9-inch) pie shells (frozen) Bake potatoes in microwave, allowing about 5 minutes per potato to cook. When soft, let cool and peel into measuring cup. Use about 3 cups of potatoes. Put stick of butter on top and put back into microwave and melt butter into potatoes. Add dash of salt, cinnamon and sugar and blend with mixer. Add eggs and mix well. Mix in vanilla. Add condensed milk and blend well. Stir in coconut (optional) and blend. Pour into 3 frozen pie shells and bake in 350°F oven for about 30 to 35 minutes or until center is set. |
