BURRITO FLOURS 
2 c. unbleached or all purpose flour
1 tbsp. baking powder
1 tbsp. shortening
3/4 c. water

Mix flour and baking powder. Cut in shortening until it looks like the size of crumbs. Add water slowly until it is just the consistency of a little bit sticky dough. Roll out on lightly floured surface and brown in medium hot frying pan with a small amount of oil. Serve immediately with condiments such as beans, cheese, salsa, onions, olives, lettuce, tomatoes, etc. Makes 8 large flours.
