2 tbsp. oil 1 1/2 c. onions 1 c. diced green peppers 1 c. sliced carrots 1 c. sliced celery 4 c. cubed zucchini 1 (35 oz.) can Italian tomatoes 2 c. green beans (cut in 1" pieces) 2 1/2 c. chicken broth (or 1 - 13 oz. can) 2 tsp. basil 1/2 tsp. oregano 3 c. cabbage, thinly sliced 1 (20 oz.) can chick peas, drained 1 (20 oz.) can kidney beans, drained 1/2 c. uncooked macaroni Salt & pepper Saute the onion, green peppers, carrots and celery in the 2 tablespoons oil. Stir in zucchini, Italian tomatoes, green beans, chicken broth, basil and oregano. Cover and simmer 40 minutes. Add remaining ingredients. Cover and simmer 15 minutes longer. Serve with grated Parmesan cheese. If too thick, add water. |
