FISH WITH MUSHROOMS & GREEN
ONIONS
 
2 tbsp. butter
1/2 tsp. tarragon
1 tsp. Dijon mustard
3 tbsp. green onions, chopped
8 oz. mushrooms, sliced
3/4 lb. fish, orange roughy, sole or similar fish fillets
1 1/2 tsp. lemon juice

Melt butter in 11 x 7 inch glass baking dish in microwave (heat 30-45 seconds). Add tarragon, mustard and onions; then mushrooms tossing to coat the mushrooms. Cook on high for 2 minutes, stirring once.

Arrange fillets in a layer over mushrooms. Dot with additional butter and sprinkle with lemon juice. Cook on high for 1-2 minutes longer until fish flakes with fork.

Since microwave ovens vary in power, you may need to adjust your cooking time.
