SUMMER BEAN SALAD 
1 (15 oz.) can black beans, drained
1 (15 oz.) can white beans, drained
1/2 c. sliced green onions
1 c. diced red bell peppers
1 c. diced green bell peppers
1 1/2 c. chopped tomatoes
3 tbsp. red wine vinegar
2 tbsp. olive oil
1/2 tsp. lite salt
1 clove garlic, minced
1/2 tsp. freshly ground black pepper

Combine beans, onions, bell peppers and tomatoes in a salad bowl. Mix vinegar, oil, lite salt, garlic and black pepper until well blended. Pour over bean mixture, toss gently. Cover and marinate in refrigerator for at least 4 hours.
