WATERMELON RIND PICKLES 
3 qts. rind (4 lbs.)
2 qts. water
2 tbsp. lime powder

SYRUP:

1 qt. white vinegar
1/2 tsp. oil of cloves
10 1/8 c. sugar
1/2 tsp. oil of cinnamon
2 tsp. whole cloves (tied in bag)

Soak rind overnight in water and lime powder. Rinse well. Cook in clean water until tender but crisp.

SYRUP: Bring syrup to a boil. Repeat process for 3 days.
