VENISON SIMPLE CHILI 
I always make a pot of white rice and pour chili over rice... you can add shredded cheese to top if desired.

1 1/2 lb. ground venison
1 sweet onion, chopped
1 green pepper, chopped
1 (28 oz.) can red kidney beans
1 (8 oz.) can tomato sauce
1 tbsp. crushed garlic (The minced garlic you find in a jar is perfect)
2 pkgs. chili seasoning
2 tbsp. extra virgin olive oil

Chop onion, chop green pepper. Heat pot, medium to high heat. Add olive oil to coat bottom of pan. Add chopped garlic to pan to lightly caramelize, add venison to brown thoroughly.

Once browned add onion, green pepper, tomato sauce and can of kidney beans stirring frequently add packages of seasoning stir until everything is mixed... Reduce heat and simmer for 1 hour... Enjoy!
