SALMON MOUSSE 
1/4 c. cold water
1 env. unflavored gelatin
1/2 c. boiling water
1/2 c. mayonnaise
1 tbsp. lemon juice
1 1/2 tbsp. instant dried minced onions
1/2 tsp. hot pepper sauce
1/4 tsp. paprika
1 tbsp. drained capers
1 (15 1/2 oz.) red sockeye salmon
1/2 c. whipping cream

Oil a 3 cup fish shaped mold - put cold water in bowl. Sprinkle gelatin over water. Let stand 5 minutes. Pour boiling water over it and stir. Stir in mayonnaise, lemon juice, onion, pepper sauce, paprika and capers. Flake salmon well. Stir into gelatin. Wrap cream to soft peaks. Fold into salmon mixture. Pour into mold. Refrigerate. Unmold. Garnish with cucumber slices, stuffed olives, lemon wedges. Serve with crackers or bread.
