CRABS CHESAPEAKE | |
6 strips cooked bacon, crumbled 2 tbsp. chopped onion 2 tbsp. chopped parsley (add string beans, corn or cabbage to taste as a variation) 2 c. flaked fresh crab meat 1/2 c. tomato puree & 1/2 c. spring water & 1/2 tsp. salt A few dashes of black pepper 1. Save half of bacon drippings to saute onion, parsley and crabmeat. 2. Add tomato puree, salt, pepper, and cook over low heat until heated and blended. 3. Prepare rice (use 2 cups uncooked). 4. When rice is cooked, mix in crumbled bacon. 5. Serve crab meat mixture over rice-bacon mixture. Serve with sour dough "fishbread" biscuits dripping in butter. Enjoy. |
