QUICK & EASY GAZPACHO 
2 ripe tomatoes, peeled
1 cucumber, peeled
1/4 c. diced bell pepper
1/4 c. diced onion
1 c. tomato juice
2 tbsp. olive oil
1 1/2 tsp. vinegar (red wine best)
Dash Tabasco
Garlic, salt & pepper to taste

Put all in blender. Blend and chill. Serve cold. Garnish with celery stick or croutons.
