BAKED SWEDISH PANCAKES | |
So simple, but so good! Halfing the recipe makes a great dish for two. 1 cup all-purpose flour 4 eggs 1 cup milk 1 tsp. vanilla (optional) 1/2 cup (1 stick) butter Mix everything but the butter together in a medium bowl with a wire whisk. Set aside. Set oven temperature to 425°F. Put butter into a 9x13-inch glass baking dish. Place the dish in the oven while it heats. This will melt the butter, saving you an extra dish to melt the butter in. When the butter is melted (and probably bubbling) remove from oven and pour the mixed batter into the pan. DO NOT MIX TOGETHER. Bake at 425°F for 15 minutes. The mixture will bake up very high and curl around the edges. I leave mine in till the sides also brown just a little.
