HERBED CHICKEN | |
4 skinless chicken breasts or leg quarters Parsley, thyme, paprika, oregano to taste 2 tbsp. olive oil 1/4 c. white wine Salt and pepper to taste Note: If using dried herbs use sparingly. Rub washed and dried chicken pieces with the olive oil, salt, pepper and herbs. Arrange chicken pieces in iron skillet or casserole dish. Sprinkle with paprika. Cover and bake in 350 degree oven for 1 hour. Check after 30 minutes to see if chicken is dry. If so, add couple of ounces of water. After chicken has cooked for 1 hour, add wine and return to oven for 1/2 hour more or until well browned. If there is too much liquid finish cooking without lid. Serves 4. |
