COCOA-MARSHMALLOW DESSERT 
1 (13 oz.) can evaporated skim milk, undiluted
1/3 c. cocoa
1/3 c. sugar
1/4 tsp. salt
18 regular marshmallows

1. Pour all but 1/2 cup evaporated skim milk into large bowl; freeze milk until ice crystals form throughout (about 1 hour).

2. Meanwhile, in a medium saucepan, stir cocoa, sugar and salt until well mixed; slowly stir in reserved 1/2 cup evaporated milk. Heat mixture over low heat, stirring constantly, until sugar is dissolved; add marshmallows and cook stirring constantly until melted, about 15 minutes. Cool mixture to lukewarm, about 30 minutes.

3. With mixer at high speed, beat chilled milk until stiff peaks form. With rubber spatula, gently fold in cocoa mixture until well blended. Pour into 9x9-inch baking pan. Freeze mixture at least 4 hours. Makes 8 servings.
