CRUNCHY NUT COOKIES 
1/2 lb. shelled hazel nuts
3/4 c. sugar
1/4 tsp. ground cinnamon
4 egg whites
Pinch of cream of tartar
1/4 tsp. vanilla

Preheat the broiler. Spread nuts on broiler pan and toast on all sides until golden brown. Roughly chop nuts and put in a bowl with sugar and cinnamon. Preheat oven to 300 degrees. Grease and flour baking sheets. In a separate bowl bet egg whites with cream of tartar and vanilla until very stiff. Gently fold in nut mixture. scrape the egg/nut mixture into a greased heavy based skillet and cook over a low heat for about 15 minutes. Place cookies on baking sheets about 1 inch apart. Bake for 30 minutes, then reduce to 250 degrees and bake for another 10 minutes until crisp.
