EDNA BARNES' TAPIOCA PUDDING 
4 c. milk
1/3 c. sugar (save some for egg whites)
1/3 c. tapioca
2 eggs, separated
Vanilla

Make custard of milk, sugar, egg yolks and tapioca. Beat egg whites and some of the sugar until stiff. Add vanilla. Fold into hot custard.

Edna's family has fond memories of sharing a dish of Edna's light custard.
