EGG CUSTARD PIE 
4 slightly beaten eggs
1/2 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
2 1/2 c. milk, heated
1/4 tsp. nutmeg
Unbaked pie shell

Blend eggs, sugar, salt and vanilla. Gradually stir in heated milk. Pour into unbaked shell. Sprinkle with nutmeg. Bake in moderate oven (350 degrees) for 35-40 minutes or until knife inserted halfway between center comes out clean. Coconut can be substituted for nutmeg.
