SOFT PRETZELS | |
2 c. warm water 2 pkgs. yeast 1/2 c. sugar 2 tsp. salt 1/4 c. soft butter 1 egg 6 1/2 - 7 1/2 c. flour Dissolve yeast and sugar in warm water. Add salt, butter, egg and 3 cups flour. Beat until smooth. Add enough flour to make dough stiff. Cover tightly and refrigerate for 2 hours. Turn dough onto floured board. Cut into 36 equal pieces. Roll each piece to about 20" long and shape like a pretzel. Place on lightly greased baking sheet. Blend 1 egg yolk with 2 tablespoons water, brush pretzels with mixture. Sprinkle with coarse or regular salt and sesame seeds. Let rise until doubled, approximately 25 minutes. Bake at 400 degrees about 15 minutes or until lightly browned. This also makes good pizza dough. |
