HOG'S HEAD PIE 
Take one hog's head. Make sure it's good and fresh and it's the upper part of the head (no tongue allowed). Scrub it real good and boil it until it's done (about 2 hours). When it gets cold, get all the meat off it and put a bunch of salt and pepper on the meat. Put the meat in a rich pie shell and cover the top with pastry strips. (If you're lucky, some folks will think this is chicken pie!) Bake it till the crust is brown and serve with sweet taters.
