ENSALADA DE LEGUMBRES (VEGETABLE
SALAD)
 
3 sweet Italian or Spanish sausages OR
1/4 lb. salami, thickly sliced
8 oz. can whole kernel corn
1 c. green beans, cooked
2 med. tomatoes, sliced
1/4 c. parsley, snipped
1 sm. garlic clove, minced
1/4 c. scallions, snipped
3 c. lettuce, torn in pieces
5 tbsp. olive oil
2 tbsp. vinegar
1 tsp. salt
1/4 tsp. pepper

About 2 hours before serving, saute the sausage in a skillet until light brown; drain. When cool, cut into thin crosswise slices. (If one uses salami, cut into cubes.) Combine with corn, green beans, tomatoes, parsley, scallion and torn lettuce. Cover and chill until ready for serving. Combine olive oil, vinegar, salt and pepper and garlic; beat well. Pour over chilled ingredients and toss lightly. Serve immediately. Serves 6.
