CRUSTLESS PIE 
4 eggs, beaten until light
1 3/4 c. sugar
2 c. milk
1/2 stick melted butter
1/2 c. self-rising flour
1 tsp. cinnamon

Beat the eggs until light; add the sugar, milk, melted butter, and flour. Continue beating until very light. Fold in cinnamon. Pour into a pair of 9" pie pans. Don't use a crust. This pie makes its own crust, a very thin one. (The pan can be greased and lightly floured before adding the mixture.)

Bake in a preheated oven at 350 degrees for 25 to 35 minutes. If you want to substitute ordinary flour instead of self-rising, add 1/2 teaspoon baking powder and a pinch of salt.
