ROLLED BRISKET OF BEEF 
4-5 lb. beef brisket
1/2 bottle Worcestershire sauce
1/2 of 3 oz. bottle liquid smoke
Lawry's seasoned salt
Garlic salt
Pepper
Sauce (recipe follows)

Mix together Worcestershire sauce, liquid smoke, seasoned salt, garlic salt and pepper. Marinate brisket in it overnight. Pour off liquid, bake, covered at 275 degrees for 15 minutes, then at 225 degrees for 1 hour per pound of meat. Remove meat from pan and add enough water to the juice from the meat to make 2 cups liquid.

When cool, take the meat back to the butcher and have it sliced paper thin or slice as thin as possible by hand.

SAUCE:

2 c. reserved liquid
1 - 1 1/2 c. ketchup
1/3 - 1/2 c. Worcestershire sauce
3/4 - 1 1/4 c. brown sugar
1 - 1 1/2 tbsp. lemon
