SOFT GINGERBREAD 
1 cup butter
1 cup unsulphured molasses
1 cup sugar
1 cup sour cream or yogurt
4 eggs
3 cups flour
1 tablespoon ginger
1 teaspoon cinnamon
1/2 teaspoon cloves (or to taste)
1 teaspoon baking soda

Mix part of the flour with the butter, sugar, molasses and sour cream. Add four well beaten egg yolks, then the spices.

Beat four egg whites until they hold a soft peak, fold into the batter along with the remaining flour.

Bake in a preheated 375°F oven until a toothpick inserted in center comes out clean. Brush top with melted butter and sprinkle with coarse sugar (turbinado works well), while the cake is still warm.
