3 c. zucchini, cubed
1/2 c. diced celery
1/4 c. minced onion
1 bell pepper

Dressing:

2/3 c. vinegar
1/3 c. oil
3/4 c. sugar

Bring dressing ingredients to boil; simmer 5 minutes. Pour over vegetable mixture and marinate overnight. Salad will keep for several days.

The salad with dressing can be frozen.
