BOILED RAISIN CAKE
1 c. sugar
1 c. shortening
2 eggs, separated
1 tsp. baking soda
2/3 c. raisin water
1/2 tsp. baking powder
2 c. flour
1 tbsp. cocoa
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. cloves
1 c. boiled raisins

Boil raisins in about 1 cup water plus soda. Reserve 2/3 cup of raisin water. Sift flour. Add baking powder and sift 3 or 4 times. Add spices and cocoa. Cream sugar and shortening. Add egg yolks to creamed mixture. Add raisin water and the flour. Roll the raisins in some flour and add to mixture.

Beat egg whites until stiff and fold into cake mixture gently. Grease and sugar (instead of flour) an oblong cake pan. Pour mixture into pan and bake at 350 degrees for 30-45 minutes until a toothpick comes out clean. Frost or is good without frosting.
