CHOCOLATE PUDDING 
2 env. unflavored gelatin
1 1/2 c. evaporated skimmed milk
3 eggs, separated
1 tbsp. chocolate extract
3 packets artificial sweetener
1 1/2 tsp. vanilla extract

Soften gelatin in 1/2 cup milk. Beat egg yolks with remaining milk and put into a saucepan. Add chocolate extract, artificial sweetener, vanilla and softened gelatin to egg yolk mixture. Stir constantly over low heat until mixture boils and thickens. Cool.

Beat egg whites until stiff but not dry and then fold into chocolate mixture. Pour into individual dishes.
