LOW FAT MUFFINS 
1 c. flour
1/2 c. oatmeal
1/2 c. sugar
2/3 c. unsweetened applesauce
1/2 c. skim milk
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
Raisins, optional

Mix all ingredients just until moist. Fill greased muffin pan or cupcake liners 3/4 full. Bake at 400 degrees for 16-20 minutes.
