LOUISIANA SEAFOOD GUMBO 
3 tbsp. oil
4 tbsp. flour
1 clove garlic
1 bunch green onions
1 bell pepper
1 1/2 lbs. shrimp
2 c. crabmeat
2 1/2 c. sliced okra
1/4 c. chopped parsley
1/2 bay leaf, crushed
1 (12-14 oz.) can chicken broth
Gumbo file
Boiling water

Make a roux of the oil and flour and brown until very dark. Meanwhile, chop the onions, garlic and bell pepper and fry in the roux. Add remaining ingredients except file. Add enough boiling water to the desired consistency. Add file just before serving and serve in bowls with approximately 1/4 cup rice.
