SOUTH TEXAS BEANS AND RICE 
1 1/4 lbs. dried pinto beans
7 c. water
1 sm. ham hock
1 med. onion, chopped
2 cloves garlic, minced
1 1/2 tsp. salt
1 lb. smoked sausage, thickly sliced
1 (10 oz.) can tomatoes with green chilies pepper, undrained
1/2 c. uncooked regular rice

Sort and wash beans; combine beans, water, ham hock, onion, garlic, and salt in large pot and bring to boil. Cover and reduce heat and simmer for 1 hour, stirring occasionally. Remove ham hock; shred ham from bone with a fork and return ham to bean mixture.
