EASY SCALLOPED POTATOES 
1 lb. potatoes
1 tbsp. all-purpose flour
1 tbsp. butter
1 sm. onion, sliced
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. skim milk, scalded

Preheat oven to 350 degrees. Pare and thinly slice potatoes. Place in saucepan and add water to cover. Bring to a boil. Simmer about 8 minutes until tender. Drain well.

Grease 3/4 quart baking dish. Place half the potatoes, half the flour and half the butter in dish. Top with half of the onion and half the seasonings. Repeat with remaining potatoes, flour, butter, onion and seasonings. Pour milk into casserole. Bake 35 minutes. Serves 4.
