COUSCOUS WITH CHICKPEAS AND FETA
CHEESE
 
1 (16 oz.) can chicken broth or vegetable broth
1 c. packaged couscous (1 box)
1 (15 1/2 oz.) can chickpeas, drained
1 c. sliced scallions (with tops)
4 oz. crumbled Feta
1 (2 1/4 oz.) can drained ripe olives
2/3 c. Italian vinaigrette dressing

In medium saucepan, bring broth to boil. Stir in couscous. Remove from heat; cover and let stand for 5 minutes. Transfer couscous to large bowl and fluff with fork. Let stand 5 minutes; fluff again. mix in chickpeas, scallions, cheese and olives. Pour dressing over mixture and toss lightly with fork. Serve on bed of lettuce.

Serves 6. Enjoy.
