GAZPACHO 
4 c. cold tomato juice
1 sm. finely minced onion
2 c. freshly diced tomatoes (do not peel)
1 c. minced green pepper
Juice of 1/2 lemon and 1 lime
1 tsp. tarragon
Dash of Tabasco sauce
Salt and pepper to taste
1 cucumber, diced
2 tsp. honey
1 clove crushed garlic
2 scallions, chopped
2 tbsp. wine vinegar
1 tsp. basil
1/2 tsp. dill
1/4 c. chopped fresh parsley

Combine all ingredients - chill at least 2 hours. Serve cold. Excellent on a warm summer afternoon.
