EMERALD ISLE MOLD 
3 oz. pkg. lime Jello
1 c. boiling water
3/4 c. juice from grapefruit
8 oz. pkg. cream cheese
3 oz. pkg. lime Jello
1 c. boiling water
1 c. ginger ale
1 c. drained grapefruit sections, cut in half
1 c. diced apples
1/4 c. ground walnuts

Dissolve 1 package lime Jello in 1 cup boiling water; add grapefruit juice. Put softened cream cheese in small mixing bowl and gradually add to this liquid until well blended. Pour into 1 1/2 quart mold, chill until firm. Dissolve remaining package lime Jello in 1 cup boiling water, add ginger ale. Chill until slightly thickened; fold in fruit and nuts. Pour over molded gelatin layer. Chill until firm, overnight.
