SPRINGTIME SALAD 
2 c. cantaloupe balls
1 pineapple, peeled and cubed
1/2 c. halved fresh strawberries
Lettuce leaves
Mint dressing

Combine fruit, arrange over lettuce leaves on salad plates, and serve with mint dressing.

MINT DRESSING:

1 c. sugar
1/3 c. water
1 tbsp. lemon juice
1/2 c. loosely packed fresh mint leaves

Combine sugar, water and lemon juice. Bring to a boil, stirring occasionally. Remove from heat. Combine with mint leaves in blender. Process until leaves are finely chopped. Cover and chill 2 hours. Makes 1 cup.
