CORN AND SPINACH SUPREME 
1/4 c. minced onion
2 tbsp. butter
1 can creamed corn
1 pkg. frozen, chopped spinach
1 tbsp. vinegar
1/2 tsp. pepper
1/4 c. Italian bread crumbs
2 tbsp. Parmesan cheese
2 tbsp. butter

Thaw spinach and squeeze all water and moisture out. Set aside. Saute onions in butter. Add spinach, corn, vinegar, salt, and pepper. Blend together well and cook for 5-6 minutes. In small bowl, mix together bread crumbs, butter, and cheese. Spray casserole with Pam. Pour in vegetable mixture. Sprinkle crumb mixture over top. Bake in 400 degree oven for 20 minutes.
