SHRIMP CREOLE | |
4 tbsp. butter 1 c. chopped onion 1 c. chopped celery 1/2 c. chopped green peppers 3 cloves garlic, minced 3 tbsp. chopped parsley 1 tsp. salt 1/4 tsp. cayenne pepper 3 bay leaves 2 cans whole tomatoes 3 lbs. raw shrimp, shelled & deveined 1 sm. can tomato sauce Melt butter in saucepan. Saute onion, celery, green peppers until soft, about 5 minutes. Stir in garlic and fry about 5 minutes more. Add parsley, bay leaves, salt, cayenne, tomatoes and sauce and simmer 15 minutes. Add shrimp, cover and simmer 30 minutes. Serve over rice. Serves 4 to 6 people. |
