GRANOLA COOKIES 
1 c. dates, firmly packed
1 c. frozen concentrated apple juice
1 tsp. vanilla
1 tbsp. chopped walnuts
1/2 c. chopped raisins
2 1/3 c. whole wheat flour
3 tbsp. peanut butter
3 tbsp. honey
1 tbsp. molasses
1/2 c. coconut
2 c. quick oats

Blend dates and apple juice until smooth, add peanut butter, honey, vanilla and molasses. Blend well and place in mixing bowl. Add nuts, coconut, raisins and flour and mix well. Add rolled oats and blend, with hands if needed. Spoon onto non-stick cookie sheet, press with wet fork or fingers until 1/4" thick. Bake at 300 degrees about 20 minutes.
