ZUCCHINI BROWNIES 
3 eggs
2 c. sugar
1 c. oil
2 c. shredded zucchini
2 c. flour
3 tsp. vanilla
1 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
3/4 c. dates or raisins (optional)
1 1/2 c. chopped nuts (optional)
1 c. chocolate chips (optional)

Mix eggs, sugar, oil and vanilla. Beat until smooth. Add zucchini and stir. Sift dry ingredients. Add dates and nuts to dry ingredients. Stir together and pour into greased and floured jelly roll or 9 x 13 pan. Drop chocolate chips individually into pan and batter.

Bake for 45 minutes at 325 degrees.
