COUNTRY SUMMER CASSEROLE | |
4 c. fresh corn, cut off the cob 1 c. sliced fresh okra 1 c. soft fresh bread crumbs 1/4 c. chopped onion 2 tsp. salt, or to taste 2 tsp. sugar 1/4 tsp. black pepper 1/4 c. bacon drippings 2 c. milk 3-4 eggs, lightly beaten 3 lg. tomatoes 2 tbsp. butter, melted Preheat oven to 350 degrees. Combine vegetables (except tomatoes), crumbs, onion, seasonings, drippings and milk into a saucepan. Stir and cook for 5 minutes or until thickened. Remove from heat and stir a little of the hot mixture into the eggs. Then gradually add eggs to mixture and turn into a buttered 2 quart casserole. |
