FASTNACHTS (GERMAN DONUTS) 
1 pkg. yeast
1/2 c. lukewarm water
2/3 c. melted shortening
1/2 c. sugar
1 tsp. salt
1 c. mashed potatoes
1 c. scalded milk
2 eggs
6 c. flour

Dissolve the yeast in lukewarm water. Combine sugar and shortening with mashed potatoes. Add scalded milk and eggs. When mixed, add yeast and finally, add flour. Let rise in a warm place, until double in bulk (takes about 1 1/2 hours). Then roll out dough, and let rise again for about 1 hour.

Cut with donut cutter and fry in deep fat. When donuts are cool, shake in a bag with powdered sugar. Or, if you like glazed donuts, you may glaze them with the following.

1 c. powdered sugar
3 tbsp. cocoa
1/3 c. milk

For chocolate glazing.

OR

1 c. powdered sugar
1/3 c. orange juice

Beat real good for an orange flavored glaze.
