STRAWBERRY PARFAIT PIE 
1 pkg. strawberry flavored gelatin
Hot berry juice plus water to make 1 1/4 cups
1 pt. vanilla ice cream
1 box (12 oz.) frozen strawberries
1 baked 8 inch pie shell, cooled

Dissolve gelatin hot liquid in 2 quart saucepan. Add ice cream by spoonfuls, stirring until melted. Then chill until thickened but not set (15 to 20 minutes). Fold in drained strawberries. Turn into pie shell. Chill until firm (30 minutes). Garnish with whipped cream or cut marshmallows and mint leaves.
