EASY CARROT CAKE 
1 (2 layer) yellow cake mix
4 eggs
2 c. finely shredded carrots
1/4 c. cold water
1 1/4 c. Miracle Whip
2 tsp. cinnamon
1/2 c. chopped walnuts

Combine cake mix, salad dressing, eggs, water, and cinnamon in a large mixing bowl. Blend well. Stir in carrots and walnuts. Pour into greased 9 x 13 inch baking pan. Bake at 350 degrees for 35 minutes or until cake tests done by inserting a toothpick in the center of the cake. Frost with favorite cream cheese frosting when cool.
