MOTHER'S BURNT SUGAR PIE
1 c. sugar (set aside to burn)
3 egg yolks, beaten well
2 c. milk
3 tbsp. plain flour
1/3 c. sugar
1/2 stick butter
1 tsp. vanilla
1 pie crust

Combine egg yolks and milk. Mix flour with 1/3 cup sugar and add to egg mixture a little at a time. Set aside. Burn the cup of sugar (in an iron skillet if possible) to a very dark brown, but do not scorch. When sugar is ready, add egg mixture and cook until thick. Cool a little, then add butter and vanilla. Have crust cooked and cooled ahead of time. Top with egg whites.
