PRETTY PINK SALAD 
2 c. cooked diced beets
2 c. diced raw apple
2 hard-cooked eggs, cut up (optional)
3/4 c. thinly sliced celery
1/2 c. mayonnaise
1/4 c. nuts

Mix all ingredients and chill several hours. Serve on lettuce leaf. Serves 4.
