FRUIT COCKTAIL CAKE 
1 (No. 2) can fruit cocktail
1 1/2 c. sugar
2 eggs
2 c. flour
2 tsp. baking soda
1 tsp. vanilla
3/4 c. brown sugar
1/2 c. coconut
1/2 c. nuts (pecans are best)

Mix fruit cocktail, sugar, eggs, flour, soda and vanilla in bowl together. Pour in well greased 9 x 13-inch Pyrex pan. Sprinkle brown sugar, coconut and nuts on top.

Bake 40 minutes at 350°F.

Icing:

3/4 c. evaporated milk
1 c. sugar
1 stick butter
1 tsp. vanilla

Mix all ingredients in saucepan, boil 2 minutes and pour over cake while both are hot.
