RHUBARB UPSIDE - DOWN CAKE 
3 tbsp. melted butter
1/2 c. sugar
2 c. diced rhubarb

Toss lightly in 8 1/4 x 1 3/4 inch round oven-ware baking dish.

Prepare package of white or yellow cake mix. Pour half over the rhubarb mix. Bake the remaining batter as cup cakes or for a second upside down cake.

Bake 375 degrees for 35 minutes.

As soon as cake is done invert on plate. Before lifting off the baking dish, let syrup drain onto cake 3 to 5 minutes.

When I have strawberries handy, I cut about 1/2 cup in halves and use with 1 1/2 cups rhubarb.
